Baingan/eggplant bharta
Steps

Roast the eggplants on low flame on both sides.peel and mash them.

Heat the oil and add mustard seeds, cumin seeds,saunf/fennel seeds and saute for a while.Also add hing Powder.

Now add spring onions, garlic, onions, green chilies,ginger and tomatoes.

Now add mashed eggplants and green peas.
- 5
Also add dry spices and salt.Garnish with green coriander leaves.
