First roast the eggplant on gas and dont overcook it the let it cool and remove the skin and mash it nicely and keep aside

In pan or kadai add oil,chopped onions,green chillies and cook till it turns pinkish add green peas and cook in medium flame
- 3
Add chopped tomatoes and cook the masala in medium flame add salt,red chilli pow and cook till it leaves oil and roasted eggplant in it and cook for at least 5 to 10 minutes and garnish it with green coriander leaves and serve with garam garam phulka or bajra roti
