Slightly slit the brinjal vertically in 4-5 areas. Insert green chillies and garlic in these slits. Grease the brinjal with oil. This will help in peeling the skin easily after its cooked.

Place the brinjal directly on the burner..keep flipping it while roasting. Roast uniformly till its soft

Peel the skin and smash the cooked brinjal and keep aside

In a kadai add oil and add ginger, garlic and chillies. Saute for some time and then add chopped onions to it

Once the onions are fried add turmeric, coriander powder,red chilli powder,salt and saute well.

Add the tomatoes to the mixture and cook well
- 7
Once the raw smell of masala disappears add the mashed brinjal to the kadai
- 8
Mix well and then add the coriander leaves
- 9
When the bharta becomes smooth and mushy switch off the gas.

Serve hot with rotis or bhakri
