Cooking Instructions

Mix all the ingredienta in a bowl and stir slowly until combine in a mixer. Then increase the speed for 8 min.

Cover the dough and let it rest in a fridge for at least 8 hours or overnight.

Melt the butter and dark chocolate. Pour powdered sugar and cocoa powder and mix them well until no lump.

Divide the dough into 4. For each dough, roll it until it spread evenly. Then spread the chocolate mixture equally.

Fold the dough 2 times and cut it into 8. Braided the dough nicely. Let it rise for another 1 hour or double it size.

Bake the bread for 20 min at 180C. Enjoy!

Brioche usually has plenty of butter, but by using coffee creamer I've reduce the butter.If you put the bread case itself on the scale to weight the ingredients, it cuts down on washing afterwards.About the coffee creamer: there's soy and milk-based types. My husband loves bread pudding, and while I have yet to pinpoint the exact awesomeness that is our favorite from a local bakery, I have tweaked various recipes I've come across to settle on this little gem that has become my husband's favorite that I have made. Lol.We know the bakery uses Brioche, so that is now what I use. The bread pudding portion of this is a hugely altered version of a Paula Deen bread pudding. Her recipe called for 2 cups of sugar in the custard to only 3 cups of cubed bread. Like, "WHAT THE WHAT?".The sauce is my version of a caramel sauce recipe I found by Ree Drummond (The Pioneer Woman). Together they made an incredibly delectable dish!You can add nuts and/or raisins if you choose, but we really prefer ours "pure", just bread, custard, and extra sauce. And since recently I really love chocolate with orange, I combined them both into a rich brioche dough to make a cake-like bread.You don't need to use a muffin tray; you can bake them in any shape or size you want.For the milk in brioche dough, the amount changes depending on the weight of the egg, so mix the ※ ingredients to make a total of 145g.If you don't have candied peel, you can use marmalade and chocolate chips. In that case, the dough will only be slightly sweet, so you can increase the amount of sugar if you want. The baking time and temperature should be adjusted to suit your own oven. I changed out the coffee and green tea with chocolate, and tried making this several times. But the chocolate won't listen to me when the temperature changes, so it isn't good for storing or letting sit out. I don't like eggs and want to make a version without egg whites, but the chocolate is difficult. If you are okay with egg whites, then that type is definitely better.Chocolate has oil in it, so I can't recommend freezing it. It is good to make it right away and then use it when you need it. It will tear easily once you chill it in the fridge, so warm it up for 10 seconds at 100 W in the microwave. The chocolate is warming up a bit, so please take care not to overheat it. The sheet will shrivel, and break apart when stretched out, which means that it has been overheated. (You heat it up twice in the recipe).
