Ingredients

2 people

2large handfuls of spinach
2eggs
2 tablespoonstomato salsa
2gluten free tortilla wraps
salt and pepper for seasoning

Steps

Cook the tortilla wraps in a large shallow pan for 1 minute on each side
Saute the spinach for 1 minute then place on the tortilla wrap

Fry the eggs until the yolk is almost set
Place on top of the spinach

Top with a little salsa
