With winter coming, the fruits in the garden can’t stay fresh on the tree for long. As in previous years, today I’m combining fruits and vegetables to dehydrate them, so we can enjoy them all winter without worrying about running out. Even when dried, they still retain their vitamins and nutrients.

With winter coming, the fruits in the garden can’t stay fresh on the tree for long. As in previous years, today I’m combining fruits and vegetables to dehydrate them, so we can enjoy them all winter without worrying about running out. Even when dried, they still retain their vitamins and nutrients.

Thoroughly clean all fruits and vegetables. Peel those that need peeling, then pat dry after washing. Slice thinly and arrange in the dehydrator trays, keeping each type of fruit or vegetable separate.

Set the dehydrator to 160°F (about 71°C) and dry for 8 to 10 hours, depending on whether you prefer them chewy or crisp. It’s convenient to dehydrate overnight. Don’t worry—the dehydrator doesn’t use much electricity. After drying, check to make sure the fruits and vegetables are dry enough. Store them in airtight containers or jars. Dried vegetables are great to have on hand for winter, and dried fruits are delicious with milk or oatmeal for breakfast, while still keeping their fresh nutrients.
