Wash all the vegetables and cut them into small pieces. Set aside.

Place a pressure cooker over low heat and add oil. Once the oil is hot, add all the whole spices and sauté for 1-2 minutes. Add the onions and cook until they turn translucent and soft. Then add the green vegetables, carrots, potatoes, cauliflower, and green beans. Sauté for 2-3 minutes, stirring occasionally.

When the vegetables are slightly soft, add the rice and sauté, stirring gently. Add just under 2 cups of water, 1 teaspoon salt, and a little lemon juice. Cover the pressure cooker and cook until you hear 2 whistles. Let it cool, then open the cooker. The vegetable pulao is ready. Serve hot.
