Rich Chocolate Gateau

I love chocolate gateaus because you can really taste the chocolate. That's why I made my own variation that suits my taste. It's moist, rich, and bittersweet - perfect for adult guests. My favorite way to eat it is to slice a small piece and serve with some whipped cream.

I recommend you use unsalted butter. I used "Ghana" black chocolate bar for the chocolate. Take care when folding in the mixture from step 1 because it becomes difficult to blend when it's cooled down. Recipe by Yukiline

Ingredients

4 servings
  1. 100 gramsChocolate
  2. 40 gramsUnsalted butter
  3. 50 mlHeavy cream
  4. 2Egg
  5. 40 gramsSugar
  6. 10 grams[A] Cake flour
  7. 12 grams[A] Cocoa powder

Steps

  1. 1

    Microwave the chocolate and butter to melt and soften (90 seconds at 700W). Add heavy cream and keep it warm (50℃).

    Add sugar into the egg and whip well until it sits in your whisk.

    Fold in the mixture from step 1 and mix well.

    Combine and sift the [A] ingredients into the bowl. Fold in lightly. Avoid any kneading.

    Pour into the pan and bake for 15 minutes in a 180℃ preheated oven. Then bake for another 20 minutes at 160℃.

    The cake is very soft when freshly out of the oven, so take care to cool it down before removing the pan. Slice it into desired sizes.

    Here's a variation using a 15cm cake pan. Even when it occupies the whole pan when it's freshly baked, sometimes the batter sinks when it's cooled down. This is actually how chocolate gateau cakes behave - don't worry. Decorate with lots of powdered sugar.
