Mutton Thukpa used to be our staple food and has been my favourite since childhood. Sometimes maternal grandfather used to prepare the noodles also at home too when he had time. Sometimes I also love making fresh ones at home. I love the broth/ soup prepared with the mutton/ goat trotters and veggies (and enjoy eating the soft trotters too) because you get a thick broth out of it.
180 gms is the weight of dried noodles.

Ingredients

2 :30 hours
3-4 servings
  • 180 gmBoiled Noodles
  • For Soup or Broth
  • 4Goat / mutton trotters and some bones
  • 2 inchginger roughly crushed
  • 1medium sized onion roughly chopped
  • to taste Salt
  • 1 cupveggies (carrot, beans etc.)
  • as neededWater
  • For Topping
  • 180 gmMinced meat
  • 1 CupCarrot julienne
  • 1 cupBeans thinly chopped diagonally
  • 1 tspSoya sauce
  • 1 tspVegetable oil (optional)
  • to taste Salt
  • 1/4 tspBlack pepper powder
  • 1/4 tspOnion powder
  • 1/4 tspGarlic powder
  • For Garnishing
  • 4 tspChopped green onions
  • 3 tspcorinader leaves
  • 1 tspSoya sauce
  • 1 tspChilli Vinegar

Steps

  1. 1

    In a big pot add in all ingredients, (I had some spinach and coriander stalks and green onions extra so I have added that too) for the broth or soup and add it about 2 litres of water and cook it for almost 2 hours, adding hot water in between as an when the water reduces and you get a thick broth..either you can strain it at once to get a clear soup / broth or strain while serving in individual bowl along with boiled noodles and Mutton & veg topping.

    While the broth is getting ready, prepare the meat and veggies topping and boil the noodles as per instruction on the packet (if not using or eating immediately, cool it by washing with cold water and drizzling it with little veg oil otherwise the noodle will overcook and the strands will stick together).

    In a pan mix all ingredients except the beans and carrot and cook the minced mutton meat (don't make the mutton mince too fine) till its cooked.when it's almost cooked add the carrot and beans and cook till the carrot and beans get cooked but not mushy.

    Once everything is prepared, put the boiled noodles in the serving bowl, top it with minced Mutton and veggies and pour the broth / soup on top of it. Garnish with green onion/ spring onion. Serve it hot with other condiments like soya sauce, chilli dip/ sauce, chilli vinegar. Top the thukpa with the condiments and make it as per your taste. Bon Appetite!!
