Cook rice and leave to cool

Chop mushrooms into small pieces and fry with thyme leaves. Season. Leave to cool.

Blitz drained beans, dates, garlic, parsley, soy and tahini until smoothish

Mix in bowl with rice, breadcrumbs, zest and mushrooms

Leave in fridge if possible

Shape into 8 patties, place on lined baking tray, refrigerate if poss.

Bake at 210 for 15mins
