Chana-Spinach Handi Dum Biryani

Wash and soak the rice in plenty of water for 30 minutes.

Wash and chop spinach. Make purée after boiling.Heat oil in heavy bottomed pan Splutter the cumin seeds, bay leaves,cloves and add onions,Saute until light brown and add the ginger-garlic paste and cook for 2 minutes in medium heat. Now add the rice and cook 90%.

Boil Chana after soaking overnight.

Wash and chop spinach. Heat oil in a thick bottom and deep pan or pot. Add all the whole spices.
Fry for some seconds or till the oil gets fragrant.
Add the sliced onions & fry till they are browned. Remove some of the fried onions for garnishing.
Add the ginger-garlic paste and fry for some seconds. Now add hing and saute for few seconds.
Add the chopped tomatoes and fry till the tomatoes becomes soft for 2-3 minutes. Add the spinach puré and stir. Saute for 3-4 minutes. - 5
Now add boiled Chana.Add salt,Mix well.Cook for five minutes.

Now in a handi put rice,then Chana mixture again rice.
Add fried onions,chopped tomatoes,mint leaves then again Chana mixture. - 7
Add fried onions,chopped tomatoes,mint leaves then again Chana mixture. Tight with lid and keep on hot tawa for ten minutes.Serve immediately.
