Ingredients

  • 1.5 lb.Ground beef
  • 2 lb.Ground Lamb
  • 3 lb. Chuck roast, cut into a 1" cube
  • 1 can Chipotle peppers in Adobo, pureed
  • 1 tablespoonadobo sauce
  • 1 large can diced tomatos
  • 1 can pinto beans, drained
  • 1 large can black beans, drained
  • 1 can great northern beans, drained
  • 3 bell peppers, green, red, and yellow, chopped to 1/2^ pieces
  • 1 1/2 teaspoonsoregano
  • 2 cans or bottles of beer, but not an IPA or Lite
  • 10 cloves garlic, finely cut
  • 1 large white onion, cut fine
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Steps

  1. 1

    Cook ground beef and ground lamb. Once cooked to your satisfaction, set them aside.

  2. 2

    Save 1 tablespoon of fat from the pan.

  3. 3

    Clean out the pan and start frying the pieces of chuck. Once cooked, add them to the beef and lamb that has been set aside.

  4. 4

    Start frying the mushrooms and onions.

  5. 5

    Add that tablespoon of fat to the pan. Then add the lamb and beef. Mix everything together.

  6. 6

    Add both bottles of beer and the pieces of all three bell peppers.

  7. 7

    Add all of the beans to the pan.

  8. 8

    Once all are together, let the pot lightly simmer for one hour.
