Cut-Out Cocoa Cookies with Rice Flour

Rice flour is pretty popular, and I had some left over, so I used it to make cookies.
With the leftover egg white, make Egg White Cookies..
I use half rice flour and half cake flour, but you could use either. You could also add chocolate chips.
It's got an Oreo-like texture, so for kids you could make cookie sandwiches using jam or cream, and that's very delicious. Recipe by Chibipurin

Sift the cake flour and combine with the dry ingredients. Use a whisk to beat the butter into a cream. Add a pinch of salt.

Add the dry ingredients in 3 batches. Use a hand mixer to mix well until fluffy. Add the egg yolk and continue to mix.

Use a rubber spatula to add the dry ingredients in 3 batches. Once it's well incorporated, flatten it out, wrap, and let sit in the refrigerator for 30 minutes.

Preheat the oven to 170ºC. Take the dough out of the refrigerator, roll out to 5 mm, and use cookie cutters to cut out shapes. Place on top of a baking sheet and bake at 170℃ for 12 to 15 minutes.
