Soak the gelatin in two tablespoons water (not listed).

Dissolve the matcha tea in two tablespoons of water.

Heat the milk and sugar using your microwave oven's "milk-warming" function (if available), and dissolve the gelatin.

Add the matcha tea powder a bit at a time to the warm milk, and mix well to dissolve. The tea will form clumps if you add too much at once. Next, add the soy milk.

Strain the mixture into a bowl, and chill the bowl over ice water. If you cool the liquid until it thickens a bit, the matcha tea will disperse more evenly throughout the mixture.

Wet the ramekins and pour the jelly liquid into them. Chill until set.

Try topping the jelly with brown sugar syrup. It's delicious that way too.
