Shockingly Soft Fluffy Dough

I just love soft and fluffy bread!
I reduced the amount of water to the bare minimum, and made it in the bread maker.
When kneading, the amount of water will vary depending on the type of flour used. Check the dough while it is kneading, and it is best if it just barely all gathers up! Please adjust accordingly. Recipe by saku_nana

Cooking Instructions
- 1
Leave it up to the bread maker up to the first rising. Will you just barely be able to get it to gather up? Please adjust the amount of water so that it does just that.
- 2
Rising complete.
- 3
Let's do the finger check without leaving that up to the bread maker. If the hole closes back up after sticking in your finger, then keep an eye on it for a bit longer.
- 4
This is a sticky dough, so sprinkle with lots of flour, and roll it up after separating it.
- 5
Cover with a wet cloth, and let rest for 25 minutes.
- 6
Mold into your desired shapes, spray with lots of mist to keep it from drying out, and let rise for the second time at 35°C for 40 minutes.
- 7
Bake at 180°C for about 13 minutes. If you want to keep it white, then sprinkle the surface with bread flour and bake at 150°C for 11 minutes.
- 8
This is the ultimate secret technique! After it has cooled a bit after baking, place it into a plastic bag, let sit until it completely cools, and completely close in the moisture.
- 9
I made tuna corn cheese bread with this dough.

Fluffy Bread Dough Fluffy Bread Dough
I bought a ton of extra-strong bread flour. However, using a lot of it at once is kind of a waste, so I blended the strong flour and cake flour to make my own, and made the dough with it. This dough is suitable for either sweet bread or savory bread. If you don't have extra-strong bread flour, use 240 g of bread flour and 60g of cake flour.Adjust the heat of the milk based on the season, and adjust the amount of milk as well based on the season and how floury the dough is.This dough is very easy to make.It won't get hard the next day and will still be delicious. All you need to do to recreate the freshly baked fluffiness is just heat it up in a 500w microwave for 20 seconds. Fluffy, Chewy, and Soft: My Best Pizza Dough Fluffy, Chewy, and Soft: My Best Pizza Dough
I wanted to eat a fluffy and chewy American type pizza like the pizza from the Costco food court. Once I made pizza dough using soy milk and it was chewy and delicious. So based on that, I came up with this recipe after several experiments.According to my family, this pizza dough is the best one ever.Proof temperature was 28℃.Be sure to not let the dough dry out.By preheating the baking tray, it helps making the dough more fluffy and the bottom side well-baked and crispy. The standard baking time is 9~10 minutes for pizza with a few toppings like with Margherita-style pizzas, and 10~12 minutes for pizzas with a lot of toppings. For 3 pies, each 25~30 cm [11.8 in] in diameter. Recipe by Homard Ebiko cookpad.japan -
Always Soft Basic Bread Dough Always Soft Basic Bread Dough
I took my usual sandwich bread recipe and shaped the dough. You can also use 180 g of strong flour and 20 g of cake flour. It so soft, it almost melts in your mouth when you have it just out of the oven (the white bread is especially soft). For the amount of sugar, use 10 g if the bread is a savory bread, and 20 g if making a sweet bread.During the fermentation process the dough will dry out in the bread case, so make sure to turn the dough over while removing any excess gas. After the first rise, it should weigh about 390 g. I fervently wanted to eat doughnuts from a certain famous store chain...Since the ingredients are so close to what it takes to make bread, it's very fluffy. The dough is very soft, so when you go to fry it, put it gently into the pan.I wanted to make them slightly chewy and sticky so I tried using rice flour. However the texture turned out to be too hard, so I recommend you use bread flour. For 8 doughnuts. Recipe by sayata cookpad.japan -

Best Hand-Kneaded Fluffy Rolls Best Hand-Kneaded Fluffy Rolls
This is a recipe I settled on after many failures. When I want to be particular about the bread, this is the recipe I always go by! The dough rises faster in the summertime, so it's ready when it has doubled in size. The extra effort makes for incredible bread.Yeast is activated at around 40℃, so be sure to heat the milk or water to this temperature, even in summer. Soften the margarine a bit before adding it. Well risen dough makes good bread. Enjoy kneading the dough by hand. Don't think about it too much. When you have all the ingredients, just go for it! Recipe by Nachuriru cookpad.japan -
