Street style Egg burfi gravy

Heat oil in a pan.Add onions. Cook,stirring,until softened but not browned. Add Ginger-garlic paste,Cook until the raw fragrant goes off. Add Tomatoes.Cook,strirring until soften. Add 2 Boiled egg yolks. Season with salt according to our taste.Stop stirring,cover the lid and cook it about 1 minutes

Mash the Tomato,Onion and Boiled yolk well. Add green chutney, Coriander powder, cumin powder, Red chilli powder, turmeric powder and stir it vigorously and rest stirring until the mixtures dries up a bit and the oil separates from a mixture. Add water. Cover the lid and cook about 5 mins

Add 1/4 cup of cheese,coriander leaves.Stirring the mixture well then cook for 2 mins

Simultaneously....Ready the omelette mix. Gently break the eggs in a bowl. Add chilli powder, turmeric powder,salt,chopped onions.Beat the mix well until frothy.Add oil to a pan and heat it. When the pan is hot enough, pour the eggs mixture.Wait the base firms up,flip it to the other side. Cook until the omelette cooked. Then Spread the cheese on the omelette and fold it.

Cut the cheesy egg omelette. Pour the egg burfi gravy on the piece of egg omelette placed on the served plate.

Halfly slice the bun.Toast it on the same pan whose we did the gravy. Spread cheese between the buns then severe it along with the egg burfi gravy
