#SeasonalCooking A great slow cooker dish that involves no prep other than actually putting the ingredients into a pot. I didn’t even chop the carrots! You can add more seasonings but I had to keep mine very simple as MrN is on a strict elimination diet and he basically can’t eat anything 😩
Because this dish is so simple it really relies on good quality beef and carrots, I know budgets vary but if you can stretch to the better quality carrots it really makes a huge difference here 🥕

Place the carrots whole and unpeeled in the bottom of the slow cooker pot. Season with salt and pepper.

Add the rosemary then top with the beef. Season again with salt and pepper and drizzle with about a tablespoon of olive oil.

Pour the water into the base and then cook in low for 8 hours.

Use two forks to pull apart the beef and stir it so that the shredded beef is coated in the cooking juices at the bottom. Taste it here and see if it needs extra salt and pepper before serving.
