Do you think you like super hot salsa? I dare...no I double dare you to try this one! It’s it’s not only super hot, it’s super delicious!!

The Carolina reaper is currently the hottest pepper registered on the Scoville scale. In the winter when I’m not growing my own, I buy the dried pods and just rehydrate them. They are approximately 175 - 880 times hotter than a jalapeño pepper depending on your source so really...be careful.

Ingredients

15 mins
  • 2 cupstomatoes, diced (you can also use 1 can Fire Roasted Diced Tomatoes. Make sure you use fire roasted though for this taste.)
  • 1Carolina Reaper Pepper (if dried, rehydrate in boiling water for 15 mins)
  • 1/4white onion, sliced thick
  • 2lg or 3 md garlic cloves, unpeeled, ends cut
  • 5-6 sprigsfresh cilantro, stems included
  • 2 tbstomato paste
  • 1/4 cupwater (if you rehydrated a dried Pepper, use some from the remaining liquid)
  • 1 tspsalt

    Slice your tomatoes in half (through the center so you have a top half and a bottom half). Next, slice your onion into a couple chunks (not too thin). Then cut the ends off your garlic cloves but leave the husks on. And finally, take your Reaper and place all onto a baking sheet and set your oven to broil. (If you rehydrated your pepper, squeeze the water out first).

    Broil on the top rack. Your pepper and garlic will blacken first so take those out when they are charred nicely but not burned. Confined to cook the tomato and onion until the tomato is mostly black.

    While your veggies and peppers are cooking, add your cilantro sprigs, tomato paste and salt to a food processor.

    When your tomatoes and onions are done, remove from oven and place them, along with all the tomato juices that are on the baking sheet, into the processor. Process well so that your pepper is dispersed enough in the salsa. (You DO NOT want to get a big chunk of that pepper all at once!)

    Place in an airtight container and refrigerate for at least an hour before eating for best flavor.

Made this yesterday with our garden fresh Carolina Reapers! Made it just like your instructions and amounts and turned out absolutely delicious! My daughter and I LOVE hot and spicy, the hotter the better for me, husband doesn't like too hot, but he actually liked this salsa (he used sparingly on his tacos LOL) - The flavor is DELICIOUS!! Thank you for your recipe! It is now my go-to!
