Popular in deli counters for breakfast, brunch or lunch in Ireland.
Steps

Preheat oven to 200°C/180°C Fan assisted.

In a large bowl, beat 2 of the eggs. In another bowl, beat the third egg and set it aside for egg wash later.

Add cheese to large bowl and combine well with eggs before adding bacon and cooked ham. Combine all well.

Work with puff pastry as per pack instructions which vary from pack to pack. Then cut into six pieces. Put pieces on baking tray lined with parchment paper. Scoop mixture into centre of each square.

Bring each corner towards the centre so they are overlapping each other in corners but leave space in centre. Press the last one down a little but not too much as you want them to open during baking.

Brush with egg wash and bake for about 20 minutes or until golden brown. Best served warm. Can be eaten cold or warmed again at 190°C/170°C Fan assisted for about 10 minutes.
