When you’re not sure what to make and you have some leftovers in the fridge that are still good, with a little creativity you can whip up some really tasty dishes.
In the past, using up leftovers was a necessity, but today we don’t always do it—sometimes we buy extra or unnecessary foods and then don’t know how to use them. It’s important to shop wisely, because wasting food is expensive and just not right. I always try to use up everything, even vegetable and fruit scraps (I give those to the chickens). We always have fresh eggs at home—they’re delicious and wholesome, and I use them often, especially when I don’t know what to cook, because they’re so versatile.
The other night, I found a lonely zucchini in the fridge, some very ripe cherry tomatoes, and a few small cauliflower florets from my garden. Since I always have plenty of eggs, I decided to make a baked frittata (I try to avoid frying in the evening). First, I sautéed the vegetables in a little oil for a few minutes, then added a ladle of boiling water and continued cooking them in the pan (covered) without frying.

Ingredients

  • 1potato
  • 1zucchini
  • 1onion
  • 8cherry tomatoes
  • 6eggs
  • 3 tablespoonsgrated Parmesan cheese (about 20 grams)
  • 2 tablespoonsfrozen peas (about 20 grams)
  • Some cauliflower florets
  • as neededOlive oil,
  • Salt, to taste
  • Black pepper, to taste
  • Fresh mint, to taste

Steps

    Peel the onion, potato, and zucchini. Rinse and cut them into small cubes. Wash the cauliflower florets and cut them into small pieces. Place the vegetables in a skillet with a drizzle of olive oil and sauté for a few minutes.

    Add a ladle of boiling water and continue cooking, covered. Halfway through, add the thawed peas. When the vegetables are tender, season with salt, turn off the heat, and let them cool slightly.

    Meanwhile, in a bowl, beat the eggs with the Parmesan cheese. Wash the cherry tomatoes and cut them into small pieces.

    Add the tomatoes to the egg mixture, then add salt, pepper, chopped mint, and the cooked vegetables. Mix well and pour everything into a baking dish (I used a 8x12-inch/20x30 cm rectangular pan) lined with parchment paper.

    Bake in a preheated oven at 400°F (200°C) for 25–30 minutes. When done, lift the frittata out of the pan using the parchment paper. Place it on a work surface, and when it’s warm, cut it into pieces and serve. Cut into small squares, it’s perfect as an appetizer or for happy hour.
