Steps

1. Take the olives for pickle and make a small slit on them.

2. Roast the fennel seeds, cumin seeds, and black pepper, each of them independently, in a nonstick pan. Roast them dry until a nice aroma comes from them. Let the roasted ingredients cool down slightly. Crush them unevenly in a mixer or hand crusher

3. Peel the garlic and separate it into its flakes. Make moderately fine garlic paste.

4. Take a small quantity of oregano, chili flakes & dried mixed herbs and mix them together in a small bowl.

5. Heat a specified quantity of Extra Virgin olive oil to moderate temperature in a small pan and pour it onto the ingredients in the bowl.

Add salt and mix.

7. Mix well all ingredients, as listed above, into a bowl. Now the mixture is ready to be filed inside the olives. Insert the above mixture in the olives into the slit already made.

8. Transfer the mixture from the bowl to a bottle and let it marinate for at least 3-4 days before serving.
