    Boil the chicken with normal seasoning (salt, pepper, knorr)

    Cut the cucumber and soak it in salted water while everything is ready

  3. 3

    Put the onions in a pan and add white vinegar, oregano and a bay leave. Low heat for 10-15 minutes

    Mix the achiote with sour orange juice/white vinegar, salt, and a bit of allspice

  5. 5

    Once chicken is ready, add the achiote mix into the full chicken breast. And grill the chicken for about 10 minutes (direct fire gives better results)

    Mince the chicken and mix with the cucumber and onions

  7. 7

    Add minced banana peppers if available and add to the mix

  8. 8

    Enjoy with some tortillas and refried beans. Goes well with habanero sauce as well.
