Inspired by the regular seblak (one of Indonesian famous street foods), this dish is brought to the next level by involving mussels to complete your protein needs. I use soaked raw prawn crackers for the carbs, but feel free to substitute with your favorite noodle.

P.S. Add some bird's eye chilis in the blended spice to add more heat.

Ingredients

15-25 minutes (without prep)

  1. 100 grMussels
  2. 1 bowlRaw Prawn Crackers, soaked in hot water for 1-2 hours
  3. 1 tbspVegetable Oil
  4. 4Lime Leaves
  5. 1 tspSugar
  6. 2 tspSalt
  7. 300 mlWater
  8. 1Egg, beaten
  9. Blended spices
  10. 2red big chillis
  11. 4Garlic cloves
  12. 6Shallots
  13. 2Candlenuts
  14. 2 tbspVegetable Oil
  15. Condiments
  16. 1 tbspFried Shallots
  17. 1Green Onion, chopped

Steps

15-25 minutes (without prep)
  1. 1

    Blend all the ingredients below the blended spices section to reach paste-like texture, it is ok if it looks runny/liquidy

  2. 2

    Add 1 tbsp of vegetable oil to a hot pan, sauté the mussels until half cooked, set aside

  3. 3

    In the same pan, stir-fry the blended spice, add lime leaves, sugar, and salt until the texture thickens

  4. 4

    Add the mussels, make sure the spices cover everything, stir-fry for 1 minute

  5. 5

    Add 200ml water, stir slowly to boil

  6. 6

    Dunk the soaked prawn crackers (or any of your favorite noodle: glass noodle, kuay teow, udon, etc) to the boiling mixture, let them cook for another 2 minutes, stir slowly

  7. 7

    Turn off the heat, add 1 beaten egg while stirring

  8. 8

    Serve in bowls, add the condiments as you want
