Let’s take a fry pan, add 1 Kashmiri red chillies, 2-3 black peppers, 1/2 tsp fennel seeds, 1 tsp coriander seeds, 1/2 tsp cumin seeds and dry roast for 1-2 mins, transfer into blender and make a coarse powder. Now keep this aside.

Let’s take another pan, add 2 tbsp ghee, once the ghee is hot, add 1-2 dry red chillies, 1/2 tsp cumin seeds, 1 tsp coriander seeds and fry the spices for 1-2 mins. Now add chopped tomatoes/puree, add salt and cook until tomatoes get soft. Now add chopped ginger-garlic and cook it for 2-3 mins. Now add prepared coarse masala, red chilli powder and cook until oil is separated.

Now add chopped capsicum, tomatoes, onion and give a stir and let’s the vegetable remains crunchy. Now add paneer, little salt and cook for another 2 mins. Now add garam masala, kasuri methi, chopped coriander and mix it gently. Now cover it with the lid and cook it for 1-2 mins on a medium flame. Now switch off the flame and the Kadai paneer is ready to serve.
