Ingredients

Serves 4 servings
  1. 1.1 poundseggplant, sliced into rounds (about 500 grams)
  2. 2 tablespoonsgarlic paste
  3. 1/2 cuptomato puree (about 120 ml)
  4. 1 tablespoonginger paste
  5. 1 cupplain yogurt, whisked (about 240 ml)
  6. Salt, to taste
  7. 1/2 teaspoonred chili powder
  8. 1/4 teaspoonturmeric powder
  9. 1 1/2 teaspoonsground coriander
  10. 1/2 teaspoongaram masala
  11. 1/2 cupfried onions (about 60 grams)
  12. 2 tablespoonsfried garlic
  13. 3 tablespoonsoil

Steps

    Fry the sliced eggplant in a little oil until golden brown.

  2. 2

    Heat oil in a skillet. Add the onions, tomato puree, and garlic paste, and sauté until fragrant.

  3. 3

    Add all the spices and salt. Cook until the oil separates from the mixture.

  4. 4

    Set this mixture aside.

  5. 5

    In an ovenproof dish, spread a layer of the cooked spice mixture. Add some fried eggplant, fried onions, fried garlic, and a layer of whisked yogurt.

  6. 6

    Repeat the layers with the remaining eggplant and mixture. Finish with a layer of yogurt, fried onions, and fried garlic. Bake at 320°F (160°C) for 10-15 minutes.

  7. 7

    Serve the eggplant in spiced yogurt sauce hot with roti or rice.
