Clean the chicken thoroughly. Use a mix of drumsticks and wings. Chop the carrot, tomato, and cilantro and set aside.

Boil water in a pan and add the carrot first to soften it slightly, but not too much (since carrots take longer to cook). Then add the chicken and simmer briefly without fully cooking it, so the meat doesn't become tough. The sweetness from the vegetable broth and chicken can be used as a soup base. Once ready, separate the chicken and carrot into a bowl and set the broth aside.

In a pan, add a little oil and sauté the cilantro roots until fragrant. Add the chicken and stir-fry. Be careful as the oil from the chicken may splatter. Stir until the chicken is slightly browned from the pan, but not fried. Then add the broth, carrot, and tomato (if you want the tomato to be soft and blend into the sauce, add it now; if you prefer it in pieces, add it later when the sauce thickens).

Season with ketchup, chili sauce, green cap soy sauce, and seasoning powder. If unsure about the taste, mix all the seasonings in a small bowl, taste, and adjust as needed. *Do not add sugar yet, as it will tighten the chicken, making it less tender. Add sugar at the end.

Simmer on low heat without stirring too much to keep the chicken skin intact. The sauce will thicken from the chicken fat and sauce. If it becomes too thick, add water to your liking.

Once you achieve the desired taste, garnish with cilantro. It's done! Very easy and delicious 😋🥰

I used our family's secret sweet and salty sauce (the amount of ingredients, soy sauce : sake : mirin : sugar = 1 : 1 : 1 : 1/2 ratio plus a drizzle of sesame oil) and arranged it to make this recipe.-Washing the wings before cooking removes the smell and make the chicken wings more delicious.-The wings would be delicious if you fry them in medium heat and crisp the skin.-The sweet and salty sauce easily gets burnt so flip the wings and cook in low heat while coating the wings with the sauce.
