I though this would be a great way to prepare potatoes from my father's hobby farm!
If you want them crispier, increase the baking time, make smaller pieces, or increase the amount of oil.

Wash the potatoes well (you will also be eating the skins).

Cut the potatoes into wedges and place in a bowl.

Pour in the olive oil and toss to coat (you can use other oil if you like).

Once the potatoes are coated in the oil, arrange on a baking sheet lined withparchment paper.

Bake in an oven at 250°C for 30 minutes, keeping an eye on them as they bake.

The skins will become nice and crispy.

Sprinkle with salt, pepper, and parsley and serve.

New potatoes are delicious. So fluffy yet crispy.
