Ingredients

  1. 1/2 cupAata
  2. 2 tablespoonSuji
  3. 1/2 teaspoonSalt
  4. 1/4 cupHot water
  5. 2Medium size Potatoes boiled
  6. 1/2 cupdry black chick peas
  7. 1/2 teaspoonbhaja red chilli powder
  8. 1 teaspoonblack salt
  9. 1/2 teaspoonroasted jeera powder
  10. 1/2 teaspoonchaat masala powder
  11. 1/2 teaspoonsalt
  12. 1/4 cuptamarind,
  13. 4 cups water,
  14. 2 green chilli and dates crushed to paste
  15. 2 tablespooncurd,
  16. 1/2 teaspoon red chilli powder,
  17. 1/2 teaspoon salt,
  18. 1/2 teaspoon sugar
  19. 1 tablespoonchopped coriander leaves,
  20. 1 tablespoonmint leaves,
  21. 1/2 teaspoonroasted jeera powder,
  22. 1/2 teaspoonred chilli powder,
  23. 1/2 teaspoonchaat masala powder,
  24. 1 teaspoon black salt
  25. to taste,salt

Steps

  1. 1

    For the puri mix together Sooji,aata,salt in a bowl add 1/4 cup hot water to this and mix to make a stiff dough.Cover the dough with a wet cloth.

    Divide it into 4 equal parts and roll out one part into a thin rope.takr a piece and roll it between the palm flatten.it with the help of a rolling pin.Then use a cookie cutter to cut it.Heat oil in a Kadai and fry it.Fry all the puris.

    Wash and soak black chana for 8 hours.Pressure cooker black chana with pinch of salt and a cup of water for 3 whistle.Drain water and keep Chana aside.Boil potatoes,peel skin,mash and keep aside.

    In a bowl mashed potatoes,add 1/2 teaspoonbhaja red chilli powder,salt bhaja jeera powder,,chaat masala powder,black salt and black chick peas mix everything.

    Tap the Panipuri at the centre lightly to make a half inch hole in it. Add about the potatoes chick pea filling into the Puri.
    Fill the Puri with spicy tamarind water, green water,white water and serve.
