Celery Leaf Fritters

Celery leaf fritters are a dish born out of curiosity. My colleague Barbara and I were talking about a lady who buys celery leaves specifically to make this recipe, but unfortunately, we were never able to get the recipe from her. So, inspired by initiative, I decided to try making these fritters my own way. The result? Absolutely delicious—crispy on the outside, soft on the inside, and with fantastic flavor!

Celery leaf fritters are a dish born out of curiosity. So, inspired by initiative, I decided to try making these fritters my own way. The result? Absolutely delicious—crispy on the outside, soft on the inside, and with fantastic flavor!

Wash the celery leaves thoroughly, then dry them.

In a bowl, whisk together the milk and eggs, then add the whole wheat flour. Start mixing with a whisk.

Add the baking soda, salt, and grated Parmesan cheese. Continue mixing until you have a smooth batter. Cover and let it rest in the refrigerator for 10 minutes.

Take out the batter, add the celery leaves cut into small pieces, and mix. Heat plenty of oil for frying, then use two teaspoons to drop spoonfuls of batter into the hot oil.

Fry until golden brown, turning the fritters as needed. Drain and sprinkle with salt. Enjoy!
