This sour soup doesn't have the richness of meat or fish, but it's still full of sweet, savory flavor from mushrooms and tofu.

Wash and cut all the vegetables into bite-sized pieces. Heat a little cooking oil in a pot and sauté the green onion (or leek) until fragrant, then add the king oyster mushroom and stir-fry until slightly firm. Add a bowl of cold water, cover, and bring to a boil. Once boiling, add the tomatoes, pineapple, and celery.

Season with vegetarian seasoning, soy sauce, sugar, and tamarind powder to taste. When the flavors are balanced, add the tofu, bean sprouts, and okra. Let it boil for a few more minutes, then turn off the heat and sprinkle chopped green onion (or leek) on top. For a spicy kick, add a few slices of chili pepper.
