This is a variation on a recipe I once copied from some printed source. It's a family favorite that I've been making since high school.

Keep whipping the eggs until pale and thick.
The batter is light enough to rise even without baking powder.
You can use vegetable oil instead of olive oil, but it tastes better with olive oil.
Sprinkle some cinnamon powder on the apples if you prefer. Recipe by Ahho

Ingredients

6 servings
  • 1Apple
  • 3Eggs
  • 90 gramsSugar
  • 70 mlOlive oil
  • 140 grams◆ Cake flour
  • 1 tsp◆ Baking powder (optional)
  • 1 dashPowdered sugar (optional)

Steps

  1. 1

    Sift together the ◆ ingredients 2-3 times. Line your pan with a baking sheet. Preheat the oven to 170°C.

    Crack an egg open into a large bowl. Add the sugar in thirds, whisking until pale and thick.

    Add the olive oil a little at a time while mixing.

    Add the sifted ◆ ingredients and fold in until there are no flour streaks.

    Cut the apples into 1-2 cm chunks and add to the batter. Using a a spatula, quickly fold the apples into the batter.

    Pour the batter into the pan and bake at 170°C for 35 minutes. While baking, if it looks as though the top is browning too fast, cover with aluminum foil.

    Remove from the pan once cooled. Dust with powdered sugar.
