Gather all the ingredients. In a small bowl, whisk the egg with the sugar until the mixture is light and frothy.

Add the oil and mix until smooth.

In a separate bowl, combine the flour, baking powder, and salt. Add this to the egg mixture and mix with a fork or hand whisk until it starts to come together, then knead by hand in the bowl until a dough forms. Once combined, transfer to a work surface and knead until the dough is smooth and soft. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.

Dust the work surface with flour and shape the cookies. I used egg, bunny, and small heart-shaped cookie cutters. Once shaped, carefully transfer the cookies to a baking sheet lined with parchment paper.

Bake in a preheated oven at 350°F (180°C) for about 10 minutes, on the middle rack. Once baked, fill with your choice of lemon jam or Nutella, and enjoy!
