Kanzo

In Northern Nigeria, bottom pot is "kanzo" meaning under or bottom. After making tuwo, a mat of mushed rice is obtained at the bottom of the pot which is left to cook till it forms a dry crust called Kanzo. This crust is removed and dried properly to remove moisture and stored in a clean dry place till ready for use. It is rehydrated and enjoyed with ground kuli kuli ( groundnut cake), vegetables and spices. I went a step further to add stir fry chicken pieces to mine for extra flavour😉. I felt nostalgic while making this recipe cos I haven't had it for more than a decade. I enjoyed eating it with my sister 😋, I am definitely doing this again.

Ingredients

  • 11/2 CupKanzo
  • 2 HandfulLettuce
  • 2Medium Tomatoes
  • 1Medium Onion Bulb
  • 1/2Medium Cucumber
  • 3/4 CupGround Kuli Kuli
  • 1/4 CupOnion Infused Vegetable Oil
  • 1 CupStir fry Chicken Breast (bite sizes) (optional)
  • Seasoning and Salt to taste
  • 2Habanero pepper (finely diced)

Steps

    Strain kanzo in a colander to drain off water completely and prevent sogginess. In a mixing bowl, add drained kanzo, kulikuli, tomatoes, onion, habanero pepper, lettuce, cucumber, oil, seasoning and salt.

    Stir thoroughly to combine. Serve and Enjoy😋

    Note: I prepared the onion infused oil. By frying onions in the oil. Discard the onions and allow the oil to cool completely.
