Soy Pulp Banana Cookies

cookpad.japan
cookpad.japan @cookpad_jp

I like soy pulp cookies, so I often made this. Instead of sugar, I would put a banana in it because it tastes better when baked. These are soft cookies so it's very easy to eat even for children.

These cookies looks like icebox cookies and just you would imagine, you chill the dough in the refrigerator. However, be careful not to put them in for too long. If you do, they will become too hard to cut. I think 30 minutes is enough. If you don't want to chill the dough, you could easily form them by hand. They should be about 5 mm wide or less. Depending on your oven and how moist the soy pulp is, be sure to adjust the baking time accordingly and be careful when you bake them! Also make sure your banana is ripe! Recipe by Sonchousan
