Chili cheese hassleback potatoes

Preheat oven to 375.

Place potatoes between the handle of two wooden spoons. Slice the potatoes into thin slices, 1/4 inch at the bottom unsliced.

Brush with butter and bake 1 hr.

Cut cheese slices into fourths to make small squares. I used about 10 slices of cheese.

Remove from oven, add small cheddar slices in between each potato slice.

Top potato with chilli and shredded cheese. Return to oven and cook 10 minutes.

Top with sour, diced onion cilantro. Enjoy.
