Cooking Instructions
- 1
Put the dashi stock and all of the seasonings into an earthenware pot and stir to dissolve.
- 2
Add whatever ingredients you like. First put in items such as daikon radish and potatoes that cook slowly in the bottom of the pot, and then add fish cakes and such on top as if to cover the ingredients that need to cook for longer.
- 3
Let it bubble and simmer for 30 minutes (uncovered).
- 4
After simmering for 30 minutes, immediately set the pot onto a double layer of bath towels and wrap it up. Leave it like that for 6 hours or more, and it's done!
- 5
Leave it alone, just like this .

You just need to simmer for about 2 hours for a delicious flavor. If you're busy, prepare the ingredients in the morning, simmer once and turn off the heat, and simmer again in the evening for the flavors to settle in. Our Family's Miso Soup Our Family's Miso Soup
I don't use miso with dashi, so I've always made miso soup this way.The reason for turning the heat off at Step 2 is to prevent the ingredients in the soup from becoming over-cooked, which would make the soup too rich. The sake dissipates while cooking, so it's fine to serve this soup to children. If you are using miso with dashi already mixed in, you can omit the dashi granules.Adjust the amount of miso to your taste, but I recommend adding a little more than you're used to! For 2 servings. Recipe by Sarami19 cookpad.japan -

Please try this with your own recipe for pork soup. The ginger is really good!Whenever I made miso soup at home, I always like to add ginger. Also, I usually prefer to add the white part of a leek or green onion to pork soup, but this time I only had the green part so...Do you call pork soup 'tonjiru' or 'butajiru'?! Whichever way you say it, just use your normal recipe and add the ginger. In our house, as well as at my parents' we make it on the sweet side using barley miso (mugi miso). And since childhood I've been enjoying it with the white part of leek and ginger on top. The ginger warms you up on cold days, and is so good, so I decided to introduce it here! If you're eating this soup over 2 days, just add as much Chinese cabbage and bean sprouts as you'll be eating that day, and add more the next day. Recipe by Yumipiyon cookpad.japan -
My Family's Oden Hot Pot My Family's Oden Hot Pot
We want to eat plenty of this, so I season it lightly. The chicken wings and wiener sausages flavour the broth and you'll enjoy the soup as well as the main ingredients. It might take a little time to prepare the ingredients, but after that, you just need to simmer slowly. Why not serve this on a cold evening with your family? The area around Himeji serves this with ginger soy sauce as dipping sauce. We like eating it with lots of mustard instead. This dish has a very gentle flavour, but you can adjust the seasonings as you like. For 4 servings. Recipe by mzhroom cookpad.japan -
