Ingredients

4-5 servings
  1. 2 poundsfresh potatoes
  2. 2medium size sweet potatoes
  3. as neededWater for boiling potatoes
  4. 🌻For Dressing:
  5. 3-4 TbspMayonnaise
  6. 1/4 cupapple cider vinegar
  7. 1/3extra virgin olive oil
  8. 1/4 tspblack pepper or to taste
  9. 🌻Fresh Herbs:
  10. 1/4 cupfresh flat-leaf parsley, roughly chopped
  11. 2 Tbspfresh tarragon, roughly chopped or 1/4 cup dill or basil
  12. 2 Tbspfresh chives or green onions minced
  13. 1small red onion chopped

Steps

  1. 1

    Boil the Potatoes: Place the both potatoes in a large saucepan cover completely with cold water and bring to a boil full flame.
    Boiled until potatoes are just tender not over boiled.

    ✅TIPS:
    If you want a best result so boil potatoes day before when all cold put in the refrigerate overnight.

  3. 3

    🌻Make the Dressing :

    While potatoes are simmering, make the dressing by whisking together Mayo, oil, vinegar and pepper in a small bowl. Set aside.

  4. 4

    🌻Assemble:
    Drain potatoes. Place potatoes mostly single layer on a baking sheet to cool and add to the dressing. Drizzle the dressing evenly over the warm potatoes. Let sit at room temperature for about 10-15 minutes.
    Add to a serving bowl gently tossing with the chopped fresh herbs, onion.
    Serve at room temp or refrigerate and chill.
