Cut potatoes in thick long shape strips and boil them with salt till half done, strain them

Add all masalas and toss them well than add besan mixed with rice flour and for extra crunch n spicy flavour add some Kurkure or any spicy crisps, sprinkle water to just wet

Deep fry them till crispy n golden don't over cook as already boiled
