Great to have with chilli, or on toast with fried tomatoes or mushrooms. Or just dip nachos in it :)

Open the avocados, remove the stone and scoop out the flesh into a good-sized bowl. Mash with a fork. Stir in the salt, lime juice and chopped tomato. Best served immediately, will keep for a short time in the fridge in an airtight container (or covered in cling film)

OPTIONAL - you can add chilli flakes, chopped coriander leaves or whatever you like - experiment away!
