This is a dish I always have on stock in my refrigerator.

Heat a frying pan, and add the ground chicken breast while breaking it up.

Once the ground chicken breast is crumbly, add the tofu while breaking it into pieces. You don't have to drain it.

Add the minced carrots and cook well.

Once the carrots have softened add the mirin and soy sauce.

Add the minced shiitake. Once the moisture has cooked off it's ready.

You can add sesame oil as a finishing touch! You can also top with egg for an oyako-don style! Adding minced greens will make it look nice.

I recommend serving this on rice with some shichimi spice!
