I wanted to try and make a blackberry lemon roll but I only had blueberries.

Prepare your baking pan and preheat your oven to 180 degrees.

In a bowl sift the flour, baking powder

Beat the eggs and sugar until creamy and pale.

Add the yoghurt, oil, vanilla and salt. Beat until we'll combined.

Add in the flour in three portions, mixing gently until the flour is incorporated.

Add the lemon zest and juice.

In a separate bowl mix the cornstarch, berries and lemon juice.

Fold in the berries into the batter.

Bake for an hour or until a toothpick inserted comes out clear.

Dust with icing sugar and serve.
