Ingredients

Serves 2 servings
  • 3/4 cupsemolina flour (110 grams)
  • 1/4 cupwater (55 grams)
  • 1 pinchsalt
  • Blanch some tomatoes and blend them (or use tomato sauce as an alternative)
  • 2 sliceseggplant (mine was large)
  • Salted ricotta cheese (as much as you like!)

    Mix the semolina flour with water and salt.

  2. 2

    Form the dough into a ball and let it rest for about 30 minutes.

  3. 3

    Cut the dough and shape it into small balls, then roll them into long, round strips.

  4. 4

    Cut into small pieces and use a gnocchi board to shape the gnocchetti.

    Cut the eggplant slices into cubes and fry them in a little oil.

    Make a simple tomato sauce with tomatoes and onion.

    Cook the gnocchetti in plenty of salted boiling water.

    Toss the cooked gnocchetti in the tomato sauce for a few seconds.

    Plate the gnocchetti, add the eggplant, and top with a generous grating of salted ricotta cheese.
