Boil the eggs for 10 minutes. Cool them under running water, peel, and grate them. Set aside one yolk to sprinkle on top of the pinchos at the end.

Prepare the imitation crab sticks and shrimp (you can also add chopped green onion if you like). Place both ingredients in a food processor and pulse until finely chopped but not mushy. Transfer to a bowl.

Add the grated eggs and mayonnaise. Mix until well combined, then chill in the refrigerator for about 30 minutes.

Meanwhile, prepare a couple of slices of bread and toast them in the oven or using your preferred method until golden and crispy.

Top the toasted bread with the chilled salad mixture. Grate the reserved egg yolk over the top and serve your pinchos.
