Cooking Instructions
- 1
Place the meat in a couscous pot, add onions, spices, and olive oil. Let it sauté over heat for ten minutes, then add water and let it boil. Immediately add the white turnips, chickpeas, and a bunch of cilantro. Meanwhile, take the couscous, add a little vegetable oil, stir it, and place it in the steamer over the pot. This is the first steaming.

After half an hour, remove the couscous, add salt, and gradually sprinkle it with water until it doubles in size. Add the remaining vegetables except for the pumpkin, hot peppers, and tomatoes. This is the second steaming.

For the final steaming, remove the couscous after half an hour, drizzle with olive oil, and stir well. Then add the pureed tomatoes, pumpkin pieces, and hot peppers to the broth, and steam the couscous for another half hour.
