Ingredients

30 minutes
Serves 2 raciones
  1. 1cup of couscous
  2. 2cups of water
  3. Salt to taste
  4. A pinch of cumin
  5. Minced mint
  6. 1/2cucumber, diced
  7. 2tomatoes, seeded and peeled, diced
  8. 1/2red onion, diced
  9. 1/2zucchini, diced
  10. 2tablespoons lemon juice
  11. 1/8cup Extra Virgin Olive Oil from Spain
  12. Zest of 1 lemon
  13. Goat cheese

Cooking Instructions

30 minutes

    Start by adding 1 cup of couscous to two cups of boiling water. Cover for 5 minutes until the water is absorbed.

    Prepare a dressing with 1/8 cups of Extra Virgin Olive Oil from Spain, 2 tablespoons lemon juice, cumin, minced mint and salt. Stir.

    Break apart the couscous by combing it with a fork. Add the 2 tomatoes, ½ cucumber, ½ zucchini, ½ red onion and finally the seasoning.

    Mix it all together.

    Lastly, add the goat cheese, lemon zest and mint. Add some Extra Virgin Olive Oil from Spain as a final touch.
