Grate the ginger, mix it with 1 tbsp sugar, honey, lemon juice and water. Boil it on medium heat 3 min. At the same time melt 1 tsp gelatin with 1 tbsp water over boiling water, without any lumps. Then add the melted gelatin to the ginger mix. Stir it well. Remove from heat. Strain it & Transfer it into the mould.

Boil the milk with roasted green leaves with sugar on low heat 2 min.
Soak 1 tbsp gelatin in 2 tsp water & melt it over boiling water without any lumps. Add the melted gelatin to the green tea mix. Stir it well. Remove from heat. Strain it. Cool it at room temperature. - 4
Whip the cream until soft peaks form, then transfer it into the green tea mix. Fold it. Then transfer it on the ginger gelly. Refrigerate it 25min

Unmould it & decorate it with caramelized nuts.
