Maple-roasted garlic
A delicious treat to accompany the Sunday roast (and keep the vampires at bay!) Roasting takes off all the harsh flavours of garlic and leaves you with a sweet flavour explosion.
Steps
- 1
Make this when you have the oven on anyway e.g. to roast some spuds. Place a ramekin (or other oven proof dish) in a hot oven (200C for preference) with some oil.
- 2
While that's heating up, remove the skin from the cloves. The best way to do this is with a broad-bladed knife - cut just the pointed tips off each clove, and then carefully squash it a little bit with the broad side of the blade. The skin will pretty much come off by itself. (And it's not the end of the world if you miss a bit, is it? :) )
- 3
Remove the hot ramekin from the oven. Pop in the garlic, stir a bit to coat in the oil, and drizzle over the maple syrup. Return to the oven and roast for about 30 minutes.
- 4
Enjoy the aroma of roasting garlic... Then, to serve, you can leave it in the ramekin or dish it up with a Sunday roast - it's all good!
