A recipe I got from the Armenian aunt of one of my friends. Simple and refreshing.
Steps

Dice the vegetables finely and place in a bowl.

Crush and chop the garlic very finely, and add it to the vegetables along with the rest of the ingredients

Mix well and let rest in the refrigerator for several hours (best is to make it overnight) until the semolina had absorbed enough moisture to be soft enough to eat

Other vegetables can be added or substituted: peppers, green onions, olives,...
