Inspired by Indonesian Sop Buntut, this oxtail soup is perfect for dinner.
Steps

Boil the oxtail with ginger and skim off the scum.

Lid on and cook the oxtail for 2 hours at weak heat. I’m using cast iron pot, if you are using other types of cookware please adjust cooking time accordingly.

Fry onion slices at weak heat slowly until those turn gold or even bit dark colour. This will increase flavour of the soup.

Cut the rest of the onion and carrots, potatoes into chunks and add into the pot. Add cinnamon powder, white pepper and salt, garlic in. Lid on and cook for another 20 minutes.

Finally add spring onion and dried onion slices in, done ✅
