Combine the pancake mix and the soy milk in a bowl and mix together with a whisk.

Cook the batter in a frying pan coated with a thin layer of olive oil. Once the top of the batter starts to bubble form small holes, turn over the pancakes and cook to a nice browned color.

Top with maple syrup or honey and serve.
